Can you see a player's specific performance stats (as under "Statistics" ) for each season they have played?

Yep.
If you go on the history page on a player, there is a green arrow you can click to see a drop down that will give you a season by season history.

In my 10yrs of playing this game, and now sitting here thinking I know most of it pretty well inside out, this is the first time I've ever seen this page!
(Quite how relevant the info shown is to anything other than being potentially of general interest to the individual manager I'm not sure), but, nice job pointing this out
